Stuffed shells is a good vegetarian go-to. Actually, a lot of Italian food seems to be that way. The prep is pretty darn easy, just needs to have time to bake. This has really become a staple in our household!
* 15-20 jumbo shells
* 3 cups marinara sauce
* 12 oz. ricotta cheese
* 6 oz. fresh mozzarella
* 1 egg
* 2 cups chopped spinach
* 1 tbsp italian herb mix
* salt & pepper
* 1 tbsp lemon juice (optional)
1. Cook shells according to package.
2. In bowl, combine cheeses, egg, spinach, herbs, and lemon juice.
3. Spread 1 cup of sauce in casserole dish, 'stuff' each shell with cheese mixture, and add to casserole dish. Top shells with remaining sauce.
4. Bake 45 minutes.
