Broccoli Cheddar Pot Pies - total time 45 minutes


In the mood for the ultimate comfort food?  I certain am.  The calendar says it is Spring, but the weather says otherwise.  Everyone is tired of the cold at this point.  Even people who love winter.  So this pot pie is a great way to warm the soul while we wait for Spring to really get here (and hopefully the Spring flowers survive through the dustings of snow).


2 tbsp butter
1 small onion, chopped
1 cup milk
2 tbsp flour
2 cups broccoli, chopped
1 cup white cheddar cheese
1 sheet puff pastry
1 egg
salt and pepper

1.  Preheat oven to 350 degrees.  Steam broccoli.  
2.  While broccoli is steaming, melt butter is sauce pot.  Saute onion in butter for two minutes, then add flour while constantly stirring until well blended.  Continue to stir while adding milk.  Let simmer for five minutes.
3.  Use ramekins to cut pot pie crust from puff pastry.  Add broccoli and cheese to milk mixture (if not enough room, transfer to mixing bowl).  Combine everything evenly and then distribute evenly to between ramekins.  Top with puff pastry, brush with egg wash, and bake for 18 minutes.
