Week Meal Plan: Eat Seasonally Spring

Spinach Enchiladas - my favorite enchiladas!
 http://alleysrecipebook.blogspot.com/2013/11/crispy-roast-potatoes-total-time-45.html

To get the best flavor from produce, it needs to be in season.  Even though grocery stores have tomatoes and squash year round doesn't mean they taste good.  Eating seasonally also increase appreciation for food... the taste of the first spring asparagus after months of not having any makes it taste even sweeter!

So, it's Spring!  Here are six recipes that feature things like spinach, asparagus, broccoli, and other leafy greens that grow well in cooler weather.  And a bonus weekend breakfast recipe!  :)  Also, every recipe is vegetarian, but you could easily add chicken to most of these recipes if you would like.  An organized grocery list is also below.
