It is also a time of abundant produce and farmers markets. If you have a garden, chances are it is brimming with zucchini and tomatoes. If you don't have a garden, your neighbor might be "gifting" you with their excess. Either way, this meal plan makes use of those garden veggies, sweet corn, blackberries, eggplant, and peppers for a mostly vegetarian week.
