Week Meal Plan: Eat Seasonally Summer

To me, summer is the best time of the year!  Living in Ohio, summer is the best weather to get outside and there are tons of events and festivals.  It is also a time of abundant produce and farmers markets.  If you have a garden, chances are it is brimming with zucchini and tomatoes.  If you don't have a garden, your neighbor might be "gifting" you with their excess.  Either way, this meal plan makes use of those garden veggies, sweet corn, blackberries, eggplant, and peppers for a mostly vegetarian week.  So here are six meals and one weekend breakfast recipe that are quick and perfect for summer...

1 pint of blackberries
1 lemon
3 ears of corn

8 squash blossoms
1 lb artichoke hearts
1 head of garlic
1 package of basil
1 jar of pesto

Meat Department
1 pound ground turkey

Dairy Department
24 oz ricotta cheese
8 oz cream cheese
12 oz parmesan cheese
8 oz sour cream
1 block of pepper jack cheese
half pound of sliced provolone
5 eggs
1 quart of soy milk
1 stick of butter

Other
1 package of jumbo shell pasta
2 jars of tomato sauce
1 box of bread crumbs
1 package of large tortillas
1 bag of flour
1 box of Kodiak Cake pancake mix
1 small jar of Nutella
1 bottle of olive oil

At Home
Chili powder
Red pepper flakes
Salt and pepper
Baking powder
Vinegar
Mayo
