Best Grilled Cheese Sandwich Tips


Everyone has always loved my grilled cheese sandwiches.  Even with basic ingredients, using these techniques really make a difference.  But ditch the Wonder bread and American cheese singles.  Get some sour dough, some better cheese like provolone, munster, or colby (or use all three), and add some vegetables like tomatoes, avocados, or sauteed zucchini.  So much better!

1.  Brown butter in a pan over medium-low heat (about four minutes). - browned butter develops a rich nutty flavor and is easier to get on the bread evenly than spreading solid butter
2.  Lay both sides of bread in the browned butter and toast one side of the bread (about three minutes). - toasting both sides of the bread give it extra crunch, flavor, and warms the inside of the sandwich
3.  Flip bread over and layer the cheese and other piece of bread, toast each side. - flipping the sandwich instead of toasting it 'open-face' style heats the cheese longer resulting in more melty goodness

Weekly Menu

After several weeks with at least one weekday off from work... it's time to go back!  So this week's menu includes a lot of casserole type dishes where there is some initial work, put it in the oven, come back 30 minutes later, and eat.  Here's to a quick week...

Orange Power Juice


The juicer is working out great!  I have decided all the hype about kale doesn't make it taste any less like grass.  Maybe I should try a different variety... and less of it.  But until then... I like spinach.  And I found my new favorite juice.  I have made it the past two mornings... yum!

2 cups of spinach
1 lemon
3 carrots
2 oranges

Italian Chicken Braid - total time 45 minutes


Mmm... calzones.  Most college student eat pizza, we ate calzones.  So these braids are basically a giant calzone to share.  I did a BBQ Chicken Braid before... this one is an Italian version with Italian herb chicken, Italian cheeses, and garlic bread braid.  So yummy!

2 chicken breasts
2 fresh mozzarella balls
.25 cup shredded parm
5 garlic cloves, minced
~ 20 basil leaves
1 sprig of rosemary
1 tbsp oregano
bread dough (homemade, can, or frozen)
1 egg
salt and pepper

1. Preheat oven to 350 degrees.  Cook chicken with salt, pepper, and a small amount of the mince garlic and herbs.  Put half of the minced garlic in a bowl with an egg white (for a garlic egg wash later).
2.  Roll out dough onto a parchment lined baking sheet.  Cover dough with minced garlic.  Lay cooked chicken in the center of the dough.  Add cheese and herbs over top.
3.  Cut one inch wide strands on each side and braid the strands over top of the chicken and cheese.  
4.  Brush garlic/egg white over entire braid.  Sprinkle any remaining shredded parm and herbs on top.  Bake for 25 minutes.  Cut slices and allow to cool for a few minutes to let the steam escape before eating.  Serve with marinara.



Happy 2013! My Resolution...


A new year comes with new resolutions (or trying out old ones again).  After watching Sick, Fat, and Nearly Dead about a month ago, I want to get more raw fruits and vegetables in my diet.  Since I wanted to start it as soon as possible (and also see if I could replace a meal or two with juice), I bought half gallon containers of Naked and Odwella juices.  Well... those are expensive!  And, while they are better than 'juice cocktails', I could only assume juice I made myself would be better.  After all, I have squeezed my own fresh tangerine juice with my grandma's glass citrus juicer and that was the best juice I have ever had!  So... I asked for a juicer for Christmas...

Fruit juice is easy to drink, which is why it is so much more prevalent in our grocery stores than vegetable juice.  I think having 50/50 fruit to veggie ratio helped ease me into the first juice recipe.  I will slowly add more and more veggies as I progress.  But until then, here is what I used for my first juice recipe...

1 mini pineapple (about 2 cups)
2 medium apples
1 large handful of spinach
3 carrots

The spinach yielded very little juice for as much as I stuffed through the juicer.  Although it did make the juice overwhelmingly green until the carrots kicked in.  The pineapple was pretty much all juice.  And then it takes about four medium apples to make a glass of apple juice.  I am sure that buying apple juice in the juice aisle is less expensive than making it yourself and it certainly is easier with no mess to clean up.  But I think it is going to be fun concocting juice recipes!  Also, I am not sure where you can buy spinach juice... and if it does exist out there, what could potentially be in the juice to give it a shelf life. If I do end up using the juice to replace a meal or two, it should actually net out to some savings!  Fruit and vegetables in bulk cost less than a processed lunch.

Weekly Menu

After a week full for family and friends celebrating Christmas, my cousin's wedding, and just spending time with each other... it's time to get back to menu planning!  No sweets this week.  I never thought I could say that I am tired of cookies (probably won't last long though).

Broccoli Rice Cups with Creme Sauce - total time 45 minutes


Another recipe with individual serving sizes... it is just so practical for portion control, simple to serve, and easy to make more and reheat later in the week.  The recipe is pretty simple enough, I think we have all made a version of broccoli and rice.  This one is slightly different because we need ingredients that will bind everything together in the cups.  And with the creme fraiche sauce... this is definitely tastier.

Broccoli/Rice Cups
1 cup brown rice

1 cup broccoli, chopped
2 eggs
1 cup cheese, divided (I used asiago, gouda, parm)
1 pinch red pepper flakes
rosemary and thyme
salt and pepper

Sauce
.5 cup creme fraiche
splash of milk
1 tbsp chopped chives
2 garlic cloves
1 tsp paprika
1 tsp chili powder
1 tsp parsely, minced
salt and pepper

1.  Preheat oven to 350 degrees.  Cook rice according to package.
2.  Combine broccoli, egg, spices and herbs, and half of the cheese.  Add rice once done cooking.  Mix together.  
3.  Spray cupcake pan with olive oil.  Spoon broccoli/rice mixture into cups.  Compress mixture in cup by pressing down with a spoon and then top with remaining cheese.  Bake for 25 minutes. Combine sauce ingredients together and drizzle over broccoli cups when serving.





Buffalo Chicken Meatball Subs - total time 40 minutes


My husband's favorite thing is buffalo chicken.  Every time we go out to eat and buffalo chicken sandwich is on the menu, he orders it.  It never fails.  I was cleaning out our freezer and thawing out some meat, one of which ended up being ground chicken (I thought it was chicken cutlets when I pulled it out of the freezer), so I thought... I guess I could make my own buffalo chicken sandwich... in meatball form (could work as a hamburger too).  I don't like blue cheese... but I do like cream cheese.  Kind of similar, right?  Also, I didn't have any bread in the house, just tortillas.  And since we're under a level 2 snow emergency, I made my own buns.

Meatballs
1 lb ground chicken
.25 cup cream cheese
.5 cup bread crumbs
6 tbsp buffalo sauce, divided
1 egg
green onions
salt and pepper

1.  Preheat oven to 400 degrees.  Combine all ingredient (using only half of the buffalo sauce).  Form into balls.  Place in casserole dish and top with remaining buffalo sauce.
2.  Bake for 30 minutes.  Serve with cream cheese spread on buns.


Buns
2 cups flour
.25 warm water
.25 cup warm milk
1 package of active yeast
1 tbsp sugar
1 tbsp melted butter
1 tbsp olive oil
pinch of salt

1.  Combine sugar, warm water, and yeast and let sit for 10 minutes.
2.  Add warm milk, melted butter, salt, and olive oil and stir together.  Add one cup of flour and mix together with bread hook.  Add remaining flour a small amount at a time until dough forms a ball.
3.  Kneed dough until smooth.  Separate into equal amounts, shape, and lay on an oiled pan.  Cover and let sit for 45 minutes (it should double in size). 
4.  Preheat oven to 400 degrees.  Bake for 15 minutes.





Chocolate Covered Peanut Butter Balls (with mix-ins) - total time 40 minutes


I usually make buckeyes every Christmas... they are pretty much expected by several family members.  Getting that 'eye' perfect and on top is harder than it seems, otherwise, buckeyes are pretty easy to make.  After the success with Chubby Hubby Truffles, I made the buckeye 'batter' and three different 'mix-ins' (a-la-Coldstone Creamery); pretzel (aka Chubby Hubby), pretzel and caramel (aka Take 5), and crushed graham cracker.  I think my favorite is the graham cracker mix-in, but everyone had their own favorite.

Buckeye Batter
2 cups creamy peanut butter
.5 cup powdered sugar
.25 cup brown sugar
1 tsp vanilla extract

1.  Mix ingredients together, including desired mix-ins.  
2.  Roll into balls and put in freezer while melting chocolate in double boiler.
3.  Dip cold peanut butter balls into chocolate and let excess chocolate drip off and place on wax paper (optional: add sprinkles or drizzle topping).  Refrigerate for 5 minutes to let chocolate set.
