Good Day Columbus - Packing Your Lunch

This morning I got to spend some time with the Good Day Columbus crew at Fox28 (check out the video here).  It was a lot of fun seeing everything that goes on behind the scenes and all of the fun segments they get to do.  I helped out with some tips on packing sandwiches for lunches, whether that's for your lunch or your kids' lunch.  It was kind of a mini Chopped challenge to think of some interesting ways to use Klosterman's bread (Ohio family owned bread company).  So here are the three super easy, super quick, all vegetarian sandwiches I came up with....

Peanut Butter Banana Rollup

Perfect for kids!  Just smear some peanut butter on two slices of bread, split the banana in half with your fingers, and wrap the bread around the banana like a taco.  The peanut butter will keep the bread "stuck" to the banana and prevent the banana from oxidizing.  Also delicious toasted a bit for ooey gooey peanut buttery goodness!

Kind of your vegetarian BLT.  Avocado makes everything better and a packed lunch is no exception.  Bring the avocado with you if you're worried about browning because all it takes is a spoon to scoop and squish!  The avocado and the cheese act as barriers for your bread to keep from getting soggy from the juicy tomatoes... and I hate soggy bread... you know I'm not recommending anything that would leave you with a soggy mess.  :)

During the winter I was obsessed with this panini!  I made them several days in a row, which never happens in my house... we're all about variety.  Even though melty brie is the best, you can still get a good cold sandwich out of this cold duo.  Just slice up the pear and the brie and layer it on.  Extra points for a toaster oven at work because nothing beats melty brie!  :)

Chicken Parm Paninis - total time 45 minutes


If you live in Ohio, you have probably heard of Melt Bar & Grilled.  Even if you don't live in Ohio, you may have heard about these huge gourmet grilled cheese sandwiches on shows like Diners, Drive-ins, and Dives.  The first one opened in Columbus last winter (original is based in Cleveland) and I had a Parma, Italy which is chicken parmesan between two slices of Texas toast with a side of fries.  While it was really, really good... I kind of feel like I might have a heart attack afterward!  So I have been wanting to make a healthier version ever since.

So when Food Network teamed up with Sargento to do the Chopped at Home challenge, I thought it was the perfect opportunity to recreate this sandwich.  I buy a lot of local cheeses, but I also love Sargento and their artisanal cheese wedges.  I also like their commercials about how they are "real cheese people"... that cheese slices shouldn't come wrapped in plastic and I couldn't agree more!

Shredded cheese for a grilled cheese sandwich can get a little messy, but it's the best way to get all of those Italian flavors without tons and tons of cheese.  Some other big differences between my sandwich and Melt's is that the chicken just has a light breading instead of being fried and the sauce is for dipping (kind of like tomato soup) because I hate, hate, hate soggy bread (can't have condiments of any sort actually touching the bread, ew).  With the garlic butter, the bread ends up becoming garlic bread, so this really is a complete Italian meal without the pasta.  Buon Appetito!

Caramelized Onion and Pear Grilled Brie Sandwiches - total time 15 minutes


One cooking secret I learned from my mom was how to make the best grilled cheese sandwiches EVER!  My sandwiches have come a long way from Kraft singles and Wonder bread.  Rustic wheat breads, sophisticated cheeses, complex flavor combinations... you name it, I have probably made it into a melty cheesy sandwich.

I mentioned a week or so ago that I was inspired by one of Harvest Moon Cafe's bison burgers with caramelized onions, pears, and brie... soo good!  I knew it would taste just as good (or better) without the meat.  So only a few days later, I made these sandwiches, and then again, and again.  Definitely addicting!  Perfect to go with a cup of soup or a side salad.  And it doesn't take long at all.  

Not So Sloppy Joes - total time 40 minutes


Oh boy, I am such a messy eater.  My husband can always tell when I've been getting into something sweet because I somehow end up with chocolate on my face.  I really have no idea how it happens, but he always notices!  I swear it's happened when I haven't had anything with chocolate...

So if it happens with a bit of chocolate, you can imagine what happens with something like wings or... heaven help me... sloppy joes.  You don't even want to see the damage afterward.

As a result, I have steered clear of the sloppy joe sandwiches.  The occasional exception needs to be open-faced with fork and 10 napkins in hand.

But what if you could make it less messy?  Why not make it encompass all of the sloppiness?  My husband called these sloppy joe hot pockets... but I would like to think these are of higher quality than a microwaved, processed, pocket of heat.  It really is just sloppy joe made from scratch (although I just ran out of my own canned tomatoes) and just like you would eat a normal sloppy joe, just all wrapped up!  Perfect for lunches and days your short on napkins.  :)

Spinach and Artichoke Panini - total time 15 minutes


I've said it several times and I'll say it again, spinach artichoke dip is my favorite appetizer!  Have you seen the new Miracle Whip commercial?  If you're going to bring the artichoke dip... bring the artichoke dip.  Haha!  Love it!

I don't know that I have ever had mayo in my spin dip though.  I always use cream cheese.  But in the case of this awesome sandwich, I used gouda... mmm... gouda.

Wasn't really sure whether to call this guy a panini or a grilled cheese, they're kind of the same thing.  I use all my grilled cheese tips to make the sandwich, but 'panini' has a classier sound for this fancy grilled cheese sandwich.  If you love spin dip, you have to try this out.  It's super quick and easy.  Perfect for lunch or a quick dinner with a soup or salad!

Turkey, Cheddar, and Apple Panini - total time 15 minutes

We haven't had deli meat in our house for a while.  When I realized how much was added to make deli meat what it is, it made my stomach hurt.  I have always wondered why we eat things that doctors recommend pregnant women to avoid.

No deli meat certainly does not mean that we don't eat sandwiches at home!  We frequently have shredded chicken leftovers in our fridge.  This time we had some turkey leftover from a turkey tenderloin I made earlier in the week (so this would make a great sandwich for you leftover Thanksgiving turkey).  

In the past I have been wary about adding fruit to savory meals.  I never really understood adding fruit to salad (except tomatoes).  But now I rarely make a salad without some kind of fruit, whether its is dried cranberries, fresh strawberries, or sliced apples.  I felt the same way about sandwiches... I mean adding cheese to an apple didn't seem like a flavor combination I would enjoy.  But I wanted to try it, and this sandwich changed my mind!

The crispness of the apple, the creamy, sharp cheese, and the savory, tender turkey makes this sandwich the trifecta of textures and flavors!


Shrimp Po Boys - total time 30 minutes


We spent a couple days in New Orleans with my husband's parents in October a couple years ago.  Those were some of the hottest days in October I have ever experienced.  Although I enjoyed the heat when I would normally be shivering in Ohio, I could only imagine what kind of heat the summer brought to New Orleans.  Probably something unbearable.

The first thing we did when we arrived (after we set our stuff down at the bed and breakfast we were staying at) we were in search for some of New Orleans famous creole food.  By the end of the weekend we had jambalaya, oysters, hurricanes, cajun everything, beignets, and more... but the first thing we had was crawfish po boys.  That cajun seasoning will wake up your senses!  Since I'm not sure I want to cook crawfish... and shrimp are much easier to get in the grocery store... here is my take on this traditional southern sandwich.

Waffle Sammies - total time 15 minutes


I love sandwiches.  And I am very particular about them.  Everything has to be stacked in a specific order.  No condiments because I hate soggy bread.  And everything has to be even... I don't want one bite of veggies, then one of cheese, then one of just bread... ick.  My husband makes fun of me for restacking my sandwiches at restaurants.  They just taste better that way!  I don't know if it is the order that it hits your tastebuds or the fact that the veggies need to be with other veggies.

Paninis are great too, kind of like grilled cheese sandwiches.  I have a panini pan that I have used in the past...  Even though it has a paddle to press the sandwich together, it is just not the same as a panini press.  I do have a waffle maker though.  If you can squish your sandwich enough to close it... waffle makers make cute panini presses!

Guinness Pulled Chicken - total time 5 minutes prep & 4 hours cook


Pretty sure this could not get any easier!  I came home for lunch the other day and threw all these ingredients in my slow cooker in about two minutes... went back to work and then came home and dinner was ready to eat!  I may have to do this every time I come home for lunch.  The chicken is so tender.  I think the bed of onions might be the trick though.  Maybe having the chicken lifted away from the pot makes it taste better.  Or maybe the onions are caramelized on the bottom.  Or maybe it is the mix of ingredients for the sauce.  Whatever it is, it is the perfect mix...

Best Grilled Cheese Sandwich Tips


Everyone has always loved my grilled cheese sandwiches.  Even with basic ingredients, using these techniques really make a difference.  But ditch the Wonder bread and American cheese singles.  Get some sour dough, some better cheese like provolone, munster, or colby (or use all three), and add some vegetables like tomatoes, avocados, or sauteed zucchini.  So much better!

1.  Brown butter in a pan over medium-low heat (about four minutes). - browned butter develops a rich nutty flavor and is easier to get on the bread evenly than spreading solid butter
2.  Lay both sides of bread in the browned butter and toast one side of the bread (about three minutes). - toasting both sides of the bread give it extra crunch, flavor, and warms the inside of the sandwich
3.  Flip bread over and layer the cheese and other piece of bread, toast each side. - flipping the sandwich instead of toasting it 'open-face' style heats the cheese longer resulting in more melty goodness
