Nutella Raspberry Tart with Wholly Wholesome

Despite my reputation at work, I actually don't bake that often.  Baking from scratch requires quite a few ingredients and I hate going to the grocery store for just one or two items (even though I can walk to it).  So when Wholly Wholesome asked me to review their products, I gravitated toward the premade pie crusts since I have had those tarts from Europe in my thoughts (chocolate tarts in Rome and raspberry tarts in Paris).  

Wholly Wholesome is a all natural, organic baked goods brand.  Many of their products are also gluten-free.  As such, they are normally in your grocer's freezer section which is great because you can always have some pie crusts or pizza dough stocked up and just pull it out of the freezer the night before.  You can find Wholly Wholesome in Whole Foods, select Kroger stores, and many other organic grocers (use their store locator).

So this tart... using a pie crust... it is sooo easy!  Only five ingredients!  Starting with your Wholly Wholesome flaky pie crust, which is perfectly buttery.  Then the Nutella ganache... yes, Nutella ganache... drool!  Topped with juicy raspberries which are $0.99 at Kroger so I bought all of them.  :)  Totally rich and dreamy... and barely any work at all (thanks to Wholly Wholesome).  You have to try this recipe!

Celebrate Pi Day (3.14) with Some Pie!

Pi Day is this Saturday (3.1415)!  Celebrate the mathematical "holiday" with some pies!  Whether it's a pizza pie, savory, or sweet... it's easy to whip up something... then calculate the circumference using pi!  That's pi times the diameter of your pie!  ;)  Here are a couple ideas and recipes for you...

What's more American than apple pie?  Well, a lot of things.  What's more American than apple pie on Thanksgiving surrounded by family?  Hmm... okay, now that's pretty American.

I've made traditional apple pie before... and you know, it's as easy as... pie.  Even making the pie crust from scratch is pretty easy.  Then I had a Dutch apple pie made by Amish bakers.  Can I just say, yum!  I looove cinnamon sugar in any combination I can think of... so packing even more of that deliciousness on top for a crunchy, cinnamon-y crust... that has to be the perfect pie right there!

For Thanksgiving, I wanted to incorporate that Dutch apple pie idea and add a little something to it.  I have been on a caramel kick lately after including Ghirardelli's Dark Chocolate with Sea Salt Caramel in our trick-or-treat candy bowl (one for you, two for me).  So caramel apple filling it is!

Mini Pumpkin Pies - total time 50 minutes


I love the idea of bite-sized desserts.  You don't have to worry about cutting servings and you can eat one at a time until you've had enough.  Since pumpkin pie is a favorite for this time of year (and we had a pumpkin carving contest at work), but you could make little apple pies too.  They are so cute, people will gobble them up!

1 large can of pumpkin puree
1 can condensed milk
12 oz cream cheese
3 eggs
1 tbsp vanilla
.5 cup sugar
1 tbsp cinnamon
1 tsp nutmeg
2 pre-made pie crusts (to make things easier)

1.  Preheat oven to 350 degrees.  Soften cream cheese in microwave.  Mix pumpkin, cream cheese, condensed milk, eggs, vanilla, cinnamon, and nutmeg together.
2.  Cut out small circles of pie dough using a cookie cutter or top of a cup.  Spray oil over mini muffin cups and carefully create mini pie crust with the pie circles.  You will likely have to make a couple small folds on the edge.
3.  Pour pumpkin pie mixture into each crust.  Bake for 35 minutes.  Sprinkle a little cinnamon sugar on top.
