Spinach Artichoke Dip - total time 40 minutes


All-time best appetizer has to be spinach artichoke dip!  I don't know anyone that doesn't like it.  If it is on the menu, we're getting it.  And when we make it at home, its a hundred times better than from a can.  Even though it is full of cream cheese, it is also loaded with a bunch of good stuff... spinach, artichokes (duh, it is in the name), garlic, spices... yum!  It's so easy to make too!


3 cups spinach, chopped & wilted
1.5 cup frozen artichoke hearts, chopped
8 oz. reduced fat cream cheese, room temperature
1 cup creme fraiche or reduced fat sour cream
4 cloves garlic, minced
1 tsp red pepper flakes
.25 cup parm, shredded
1 tsp olive oil
salt and pepper

1.  Preheat the oven to 350 degrees.  Chop up your spinach and wilt it down in a pan over low heat with olive oil.  It should only take a minute or two.
2.  Chop artichokes and mince garlic.
3.  Combine spinach, artichokes, garlic, cream cheese, creme fraiche, red pepper flakes, salt, and pepper into a small mixing bowl or right in the small casserole dish.  Top with shredded parm.
4.  Bake fore 25 minutes until nice an bubbly.  Serve with baguette toasts, pitas, or tortilla chips.
