I mentioned a week or so ago that I was inspired by one of Harvest Moon Cafe's bison burgers with caramelized onions, pears, and brie... soo good! I knew it would taste just as good (or better) without the meat. So only a few days later, I made these sandwiches, and then again, and again. Definitely addicting! Perfect to go with a cup of soup or a side salad. And it doesn't take long at all.
4 slices of bread (sour dough or rustic loaf)
1 small onion, sliced
1 pear, sliced
6 oz brie
2 tbsp butter
1. Heat pan to medium heat. Melt 1 tablespoon of butter in pan until it gets a slight caramel color. Add the onions to caramelize for a minute and set aside.
2. Add the remaining tablespoon of butter, place bread in the pan to soak up some of the butter, then flip immediately to toast.
3. After about a minute of two, flip the bread back over, add cheese, pear slices, and caramelized onions and close up the sandwich. Grill for another minute then flip entire sandwich over and grill for the last minute.
4. Plate the sandwich, let it rest for a minute for the cheese to set, then cut and half and enjoy!
