Great for breakfast or a side dish. It might be easier to do this as a casserole instead of latkes because I always have issues keeping things like this together when flipping them over (like crab cakes).
1 large onion, chopped
1 bell pepper, chopped
4 medium potatoes, shredded
3 cloves garlic
.5 cup parmesan, grated
.5 cup white cheese, shredded (I used havarti)
.25 cup sour cream
1 egg
2 tbsp flour
3 tbsp butter, divided
salt & pepper
1. Melt one tablespoon of butter, add onions and pepper, and saute for five minutes. Add garlic, salt, and pepper, cook three more minutes.
2. Shred potatoes and add to a bowl. Add onions and peppers to same bowl. Add cheeses, sour cream, egg, and flour to bowl.
3. Melt butter in pan and spoon out batter, press with spatula to flatten. Flip after about four minutes. After four minutes on the other side, serve... good plain or with ketchup.
