Cauliflower Croquettes - total time 45 minutes
Some times you just get a craving for fried potatoes. Does that mean you have to run out to the nearest fast food place that sells greased up french fries? Actually, my french fry craving default is usually crispy roasted potatoes... but these croquettes are pretty awesome. And since I am not a huge fan of cauliflower, but still like to get a variety of vegetables in my diet, this recipe is perfect. Kids will love it because it is potatoes, crispy, and finger food... you could serve them as appetizers, a side, or as a main dish with a salad. And they are cute!
1 head of cauliflower, chopped
2 cups potatoes, chopped
1 egg
.5 cup feta
1 cup bread crumbs
3 tbsp butter
salt and pepper
1. Boil potatoes for five minutes. Add chopped cauliflower to the pot of potatoes, continue to boil for five more minutes.
2. Mash potatoes, cauliflower, feta, egg, salt, and pepper together. Allow mixture to cool (I put it in the fridge for five minutes). While mixture is cooling, melt butter in pan on low heat.
3. Form croquettes into desired shape, coat with bread crumbs, and fry in butter. Turn croquette to cook for about two minutes per side. Allow to cool on paper towel and enjoy!
Yum
Holy heck. Found this on tastespotting - this is SO up my alley! What a fab idea.
